Airmail: Light gold rum, Lime juice, Honey syrup and Brut Champagne / sparkling wine, chilled. Served in a collins glass.
The Spec
- 45 ml Light gold rum
- 15 ml Lime juice
- 15 ml Honey syrup
- to top Brut Champagne / sparkling wine, chilled
Method
Shake the rum, lime juice and honey syrup hard with ice, then strain into an ice-filled Collins/highball glass. Top with chilled brut sparkling wine and give a brief, gentle stir (do not shake the wine).
Served in a collins glass. Garnish: none traditional; a lime wedge or twist is optional. (some modern presentations add a novelty postage stamp as a nod to the name.).
