Tom and Jerry
Tom and Jerry: Cognac, Aged Rum, Tom & Jerry batter, Hot milk and Freshly grated nutmeg. Served in a mug. Garnish: freshly grated nutmeg.
The Spec
- 30 ml Cognac
- 15 ml Aged rum
- 2 tbsp Tom & Jerry batter
- top, ~120 ml Hot milk
- garnish Freshly grated nutmeg
Method
Pre-warm a Tom & Jerry mug (or toddy mug) with hot water and discard. Add 2 tbsp Tom & Jerry batter, then the cognac and aged rum. Top with hot milk (optionally part hot water), stirring gently so a creamy, foamy head forms. Dust with grated nutmeg. Batter: beat egg yolks until thin, beat in the sugar, a splash of rum and the spices; separately beat egg whites to a stiff froth and fold into the yolk mixture.
Served in a mug. Garnish: freshly grated nutmeg.
