Amaretto sour
Amaretto sour: Amaretto liqueur, Lemon juice, Simple syrup, Pasteurised egg white and Angostura Bitters. Served in an old-fashioned glass.
The Spec
- 60 ml Amaretto liqueur
- 30 ml Fresh lemon juice
- 1 tsp Simple syrup
- 15 ml Pasteurised egg white
- 1 dash Angostura aromatic bitters
Method
Reverse dry shake: shake all ingredients hard with ice, strain the liquid back into the shaker, discard the ice, dry-shake (no ice) to build the foam, then fine-strain into an ice-filled rocks glass. (Equivalent to the more common dry-shake-first-then-shake-with-ice; either order works.)
Served in an old-fashioned glass. Garnish: maraschino or luxardo cherry, optionally with an orange slice/wheel.
