Brandy sour
Brandy sour: Cognac, Lemon juice, Rich sugar syrup, Egg White and Angostura Bitters. Served in an old-fashioned glass.
The Spec
- 50 ml Cognac
- 22.5 ml Lemon juice
- 15 ml Rich sugar syrup
- 15 ml Egg white
- 3 dashes Angostura Aromatic Bitters
Method
Reverse dry shake: shake all ingredients with ice, strain the liquid back into the shaker, discard the ice, then dry shake (without ice) to emulsify the egg white. Fine strain into an ice-filled glass.
Served in an old-fashioned glass. Garnish: lemon zest twist and/or a cherry; a few drops of angostura on the foam optional.
