Chi-chi: Vodka, Pineapple juice and Cream of coconut. Served in a highball glass.

Method
Add all ingredients to a shaker with ice and shake until well-chilled and frosty (about 20 seconds), then strain into an ice-filled glass. For a frozen version, blend with about 1 cup of ice until smooth.
Served in a highball glass. Garnish: pineapple wedge (optionally a maraschino cherry and/or a cocktail umbrella).
