Test Pilot

Test Pilot: Jamaican dark rum, Puerto Rican light rum, Cointreau, Falernum, Lime juice, Pernod and Angostura Bitters. Served in an old-fashioned glass.

The Spec

Method

Flash-blend all ingredients with about 1 cup crushed ice on high for ~5 seconds (until frothy/ice broken up but not fully smooth), then pour unstrained ("dirty dump") into the glass and add more crushed ice to fill. The Pernod + Angostura combination is Donn Beach's signature accent and is essential — Pernod is potent, so do not exceed 1/8 tsp.

Served in an old-fashioned glass. Garnish: not specified in beachbum berry's grog log; a cocktail/maraschino cherry (optionally speared to an oyster fork) is the common modern garnish, and some builds express a lime twist..
