The Spec
- 1 cube Fresh pineapple
- 45 ml Straight rye whiskey
- 5 ml Pineapple juice
- 5 ml Rich sugar syrup
- 2.5 ml Luxardo Maraschino liqueur
- 1 dash Angostura Aromatic Bitters
- 30 ml Brut champagne or sparkling wine
- 1 Lemon twist
Method
Pre-chill a coupe (or cocktail glass). Muddle the pineapple cube in a shaker, then add the rye whiskey, sugar syrup, maraschino liqueur and Angostura bitters (Difford's also adds a splash of pineapple juice). Shake vigorously with ice until the pineapple is crushed to pulp, then fine strain into the chilled glass. Top with the chilled champagne and express a lemon twist over the surface.
Served in a coupe glass. Garnish: expressed lemon twist.
